With more than 30 years in the culinary industry, Chef T has built a career around a simple belief: great food should tell a story.
Much of his culinary journey was shaped by his years living and working in Hawaiʻi, where he had the opportunity to work alongside respected chefs including Peter Merriman, Roy Yamaguchi, Joey Macadangdang, and his mentor, Master Chef Philippe Chin. Those experiences helped shape not only his approach to cooking, but also his appreciation for the cultures, traditions, and people behind the food.
His career has taken him through professional kitchens, restaurant ownership, and entrepreneurship. He has owned a Mexican restaurant, partnered in a steakhouse, and built his own food businesses—experiences that have given him an appreciation for cuisines and techniques from many different cultures.
Today, Chef T has brought that experience to the Pacific Northwest, where his focus is sharing the food and stories of Hawaiʻi through Braddah T’s. His approach goes beyond serving familiar island favorites. Through his cooking, Chef T introduces guests to the history of Hawaiian food—from the ingredients and traditions of pre-contact Hawaiʻi to the cultural influences that transformed the islands’ cuisine over generations.
For Chef T, every dish is an opportunity to share a little history, bring people together, and pass along the spirit of aloha that has influenced both his life and his cooking.
